Italian Baked Chicken

minced garlic

sodium-reduced pasta sauce

each dried basil and oregano

part-skim mozzarella cheese

cooked, long grain brown rice

Directions

Preheat broiler.

In medium skillet, heat oil over medium-high heat; add chicken breast and cook, turning once, until chicken is no longer pink and browned on both sides. Remove from pan; place in a small baking dish that has been sprayed with nonstick cooking spray. Set aside.

Reduce heat to low; add garlic, tomato sauce, basil, oregano and red pepper flakes to skillet. Simmer for 2-3 minutes.

Top chicken with sauce mixture followed by cheese. Broil for 1-2 minutes until cheese is melted and golden brown. Serve with rice.
