Curried Egg Salad in a Pita

Ingredients

6-inch 15 cm whole wheat pita bread
2 2 hard cooked eggs, mashed
1 1 chopped green onion
1/4 tsp 1 ml curry powder
2 tbsp 30 ml light mayonnaise

Directions

  1. Cut pita bread in half; gently open each side to form a pocket opening. Set aside.
  2. In bowl, combine mashed eggs with onion, curry powder and mayonnaise. Divide egg mixture in half and stuff into pita bread halves.
