Black Bean, Corn and Couscous Salad

Ingredients

1 1 can (19 oz/540 ml) black beans, drained and rinsed
1-1/2 cups 375 ml frozen corn kernels, rinsed
1 1 medium sweet red pepper, diced
2 2 green onions, chopped
1/4 cup 50 ml chopped fresh coriander
2 cups 500 ml cooked couscous
All-Purpose Vinaigrette:
1/4 cup 50 ml rice wine vinegar
2 tbsp 30 ml olive oil
1 tsp 5 ml Dijon mustard
1 1 small clove garlic, minced or 1/4 tsp (1 ml) garlic powder
1/4 tsp 1 ml each salt and pepper

Directions

  1. All-Purpose Vinaigrette: In small bowl, blend together vinegar, oil, mustard, garlic, salt and pepper.
  2. In large bowl, combine beans, corn, red pepper, green onions, coriander and cooked couscous. Add vinaigrette; toss gently until combined.
