Bean Burritos

Ingredients

2 small 2 small whole wheat flour tortillas
1/2 cup 125 ml refried beans
1/2 cup 125 ml salsa
2 2 lettuce leaves
2 2 slices tomato
1/4 cup 50 ml part-skim mozzarella cheese

Directions

  1. Spread each tortilla with half of the refried beans. Top each with half of the salsa, one lettuce leaf and one tomato slice. Sprinkle each tortilla with 2 tbsp of cheese.
  2. Roll up into a cylinder and wrap in a piece of paper towel. Place both tortillas on a microwave-safe dish and microwave, on High, for about 1 minute or until cheese is slightly melted.
