Grilled Vegetables and Hummus on a Panini Roll

Ingredients

1 tsp 5 ml olive oil
2 tbsp 2 ml balsamic vinegar
1 small 1 small onion, thickly sliced
half half medium yellow pepper, quartered
1 small 1 small zucchini, cut lengthwise
1- 3 oz 90 g large panini roll, cut in half
6 tbsp 75 ml plain or roasted garlic hummus
1 oz 30 g provolone cheese
1/2 cup 125 ml arugula leaves

Directions

  1. Preheat grill.
  2. In bowl, combine onion, peppers and zucchini with oil and vinegar. Place on grill and cook until tender-crisp. Remove from grill and set aside.
  3. Spread each half of roll with hummus. Top bottom half of roll with grilled vegetables followed by cheese. Place under broiler for 1-2 minutes until cheese is melted. Top with arugula. Place second half of bun on top. Cut in half to serve.
