Asparagus Frittata

Ingredients

2 2 large eggs (mixed with 1 tbsp water)
1 tsp 5 ml olive oil
1 1 green onion, chopped
1/2 cup 125 ml chopped asparagus
pinch pinch pepper
1/4 cup 50 ml part-skim mozzarella cheese, shredded

Directions

  1. Preheat broiler. Wrap handle of a small, nonstick skillet with foil.
  2. In small bowl, beat eggs with water: set aside.
  3. In skillet, over medium heat, saute asparagus in oil for 3-4 minutes or until tender-crisp. Sprinkle with pepper.
  4. Pour eggs over asparagus. Sprinkle with cheese. Cook for 3-4 minutes or until bottom is lightly browned, but centre is still not set.
  5. Place under broiler and cook for 1-2 minutes until frittata is puffed and golden.
