Vegetarian & Mushroom Pasta

Ingredients

1 tsp 5 ml olive oil
1/2 cup 125 ml sliced mushrooms
1/2 cup 125 ml sodium-reduced tomato sauce
1/2 tsp 2 ml minced garlic
1/2 tsp 2 ml dried basil
1/2 cup 125 ml veggie ground round
1 cup 250 ml cooked whole wheat penne noodles
1 tbsp 15 ml grated Parmesan cheese

Directions

  1. In medium skillet, heat olive oil over medium heat. Saute mushrooms for 3-5 minutes, or until moisture has evaporated. Stir in garlic, basil and tomato sauce. Add veggie ground round. Reduce heat to low and simmer for 8-10 minutes until sauce is heated through. Add a tablespoon (15 ml) of water (or red wine) , if sauce thickens too much.
  2. Add cooked penne noodles to sauce mixture; toss to coat. Sprinkle with Parmesan cheese.
