Mediterranean Turkey Sandwich

Ingredients

2 tbsp 30 ml roasted garlic hummus or plain hummus
2 slices 2 slices whole grain bread
1/8 tsp 0.5 ml pepper
1 1 lettuce leaf
2 oz 60 g roasted turkey breast, thinly sliced
1/4 cup 50 ml cucumber, thinly sliced
1/4 cup 50 ml red pepper strips, thinly sliced

Directions

  1. Spread hummus on one side of each bread slice. Lightly sprinkle with pepper. Place lettuce leaf, turkey breast, cucumber and pepper on top of one slice. Top with remaining bread, hummus side down. Cut in half.
