Grilled Chicken Salad

Ingredients

1 oz 30 g green beans, trimmed (about 8 beans)
4 oz 120 g chicken breast, boneless, skinless, raw
1/2 tsp 2 ml olive oil
1/4 tsp 1 ml garlic pepper seasoning blend (1/8 tsp each garlic powder and ground black pepper)
2 cups 500 ml mixed greens
1/2 1/2 medium carrot, shaved into thin slices
1/4 1/4 medium red pepper, julienned
1/4 cup 50 ml sliced cucumbers
1 1 radish, sliced
1/2 cup 125 ml yellow and/or red grape tomatoes, halved
2 tbsp 30 ml vinaigrette (4 tsp olive oil + 2 tbsp vinegar)

Directions

  1. In saucepan, plunge green beans into boiling water for 3-4 minutes or until tender-crisp. Drain and rinse under cold water. Drain again.
  2. Brush chicken with oil and rub garlic/pepper seasoning on both sides. Grill chicken, over medium heat, turning once, for 8-10 minutes or until no longer pink. Cut into 1/2-inch slices.
  3. Meanwhile, place greens on serving plate. Arrange beans, carrot, pepper, cucumber radish and tomatoes on top. Top with chicken slices. Drizzle with vinaigrette.
