Beef & Broccoli Stir-Fry

Ingredients

2 1/2 oz 75 g cooked lean beef, sliced
2 tsp 10 ml vegetable (canola) oil
1 small 1 small sliced onion
1/2 tsp 2 ml each minced garlic and ginger
1 cup 250 ml chopped broccoli
1/4 cup 50 ml each beef broth and water
2 tsp 10 ml each soy sauce and hoisin sauce
1 tsp 2 ml cornstarch (mixed with 2 tsp water)
1 cup 250 ml cooked, long grain brown rice

Directions

  1. In medium skillet, heat oil over medium-high heat. Add beef and stir-fry for 1 to 2 minutes or until browned. Remove from skillet and set aside.
  2. Add onion and sauté for 3-4 minutes until softened. Add garlic, ginger and broccoli. Cook for 3-4 minutes or until broccoli is tender-crisp.
  3. Add beef, broth, water, soy sauce, and hoisin sauce. Stir to combine. Add cornstarch mixture and cook for 1 minute until thickened. Serve over rice.
