Seared Steak Salad

Ingredients

3/4 cup 175 ml fresh green beans, trimmed
4 cups 1 L torn mixed greens
1 cup 250 ml grape tomatoes or cherry tomatoes, quartered
3 tbsp 45 ml Caesar salad dressing, light
2 tbsp 30 ml light sour cream, 5%
1/2 tsp 2 ml ground cumin
1/4 tsp 1 ml pepper
8 oz 250 g sirloin steak, boneless, cut 1-inch thick
1 tsp 5 ml lemon juice
2 tbsp 30 ml red onion, chopped
1/2 oz 15 g Parmesan cheese, fresh, shaved

Directions

  1. In medium saucepan plunge green beans into boiling water for 5 minutes or until crisp-tender. Drain. Cool.
  2. In small bowl, combine salad dressing and sour cream. Set aside.
  3. In large bowl combine greens, tomatoes and beans. Set aside.
  4. In small bowl stir together cumin, salt and pepper. Rub on both sides of steak. In medium nonstick skillet coated with cooking spray, cook steak over medium-high heat for 5 to 10 minutes, turning once, or until desired doneness. Remove from skillet. Let steak rest for 1-2 minutes. Toss greens mixture with dressing. Cut steak across grain into thin slices. Arrange on top of greens.
  5. Sprinkle lemon juice over steak. Top salad with onion and cheese.
