Skillet Shrimp with Tomatoes and Feta

Ingredients

1 tsp 5 ml olive oil
1 clove 1 clove garlic, minced
1 cup 250 ml cherry or grape tomatoes, halved
1/8 tsp 0.5 ml dried oregano leaves
1/8 tsp 0.5 ml pepper
3 oz 90 g frozen, peeled and deveined, medium shrimp, thawed
1 tbsp 15 ml green onions, sliced
1 tbsp 15 ml feta cheese, reduced-fat, crumbled
1 cup 250 ml cooked linguini noodles

Directions

  1. Heat oil in small nonstick skillet. Cook garlic over medium-high heat about 30 seconds or until fragrant. Stir in tomatoes, oregano, and pepper. Cook and stir about 2 minutes or until tomatoes are soft.
  2. Add shrimp and onions. Cook and stir for 2 to 3 minutes or until shrimp turn opaque. Stir in linguini noodles. Transfer to plate; sprinkle with cheese.
