Pesto Baked Halibut with Avocado and Tomato Salsa

Ingredients

10 oz 300 g halibut portions, patted dry
2 tbsp 30 ml light mayonnaise
2 tsps 10 ml prepared pesto sauce
1 tbsp 15 ml dried breadcrumbs
Avocado Salsa
1/2 cup 125 ml chopped tomatoes
1/2 1/2 medium avocado, diced
1 tbsp 15 ml lime juice
1 tbsp 15 ml red onion, finely chopped
1 tsp 5 ml cilantro, finely chopped
pinch pinch red pepper flakes

Directions

  1. Preheat oven to 400 F (200 C). Line a small baking dish with parchment paper.
  2. In small bowl, combine mayonnaise and pesto sauce. Smear over halibut. Bake for 8-10 minutes until fish is opaque and flakes easily with a fork.
  3. Meanwhile, in medium bowl, combine tomatoes, avocado, lime juice, onion, cilantro and red pepper flakes.
  4. Place fish fillets on plate and spoon salsa over top.
